Hot Chicken Salad

Great for wedding/baby showers…

1 cup Mayo
2 tsp lemon juice
1/2 tsp salt
1 cup chopped celery
3/4 cup sharp cheddar - grated
1 tsp grated lemon peel
2 tsp grated or minced onion
1-1/2 cup cooked chicken diced
1 cup sliced chopped almonds
1 cup crushed potato chips

Blend mayo with lemon peeol, lemon juice, salt and onion. Mix lightly with chicken, celery and almonds. Spoo into 1-1/2 quart casserole dish or invidicual serving dishes. Top with cheddar cheese and potato chicks.

Bake 400 degrees for 15-20 minutes or until piping hot. Serve in invidual dish or on bed of lettuce. Also good on a mini croissant.
