Hot german potato salad

HOT GERMAN POTATO SALAD

This salad is a great accompaniment to ham. It’s also great to take to a potluck supper.

6 cups peeled potatoes (about 2 pounds), cut into 1/4-inch slices
1 cup chopped onions
1 cup chopped celery
1 cup water
2/3 cup cider vinegar
1/4 cup sugar
2 tablespoons quick-cooking tapioca
1 teaspoon salt
3/4 teaspoon celery seeds
1/4 teaspoon pepper
6 slices bacon, crisp-cooked, drained and crumbled
1/4 cup snipped fresh parsley

In a 3 1/2- or 4-quart crockery cooker, combine potatoes, onion and celery.

In a bowl, combine water, vinegar, sugar, tapioca, salt, celery seeds and pepper. Pour over potatoes.

Cover; cook on low heat setting 8 to 10 hours or on high heat setting 4 to 5 hours. Stir in bacon and parsley. Makes 8 servings.
