Hot German-Style Potato Salad

This is an old-fashioned recipe with a lot of down-home flavor-a perfect starch to serve with lean meat loaf, burgers, pork tenderloin, or skinless chicken breasts.

Serving Size: 2/3 cup

Ingredients:

medium potatoes (about 1-1/2 pounds) - 5
bacon - 5 slices
vinegar - 1/4 cup
egg - 1
sugar - 2 tsp
salt - 1/4 tsp
fresh ground black pepper - 1/4 tsp
chopped onion - 1/2 cup

  1. Peel and halve the potatoes and cook in boiling water until tender. Drain and slice. Set aside.

  2. Cook the bacon until crisp. Drain, reserving 1 tablespoon of bacon fat. Crumble the bacon and set aside.

  3. In a large nonstick skillet, combine the 1 tablespoon bacon fat, the vinegar, 1/4 cup water, the egg, sugar, salt, and pepper. Place over moderately low heat and stir constantly until the dressing is thickened; do no allow the egg to coagulate.

  4. Add the reserved potatoes and crumbled bacon; stir in the onion. Mix and heat through. Serve hot.
