how to make egg noodles like my german grandmother did

I have tried forever to make egg noodles like my german grandmother did,they are still lacking the smooth taste, and still need salt added to them.

Would someone please help.

The recipe I use for Spaetzle is:

2 eggs
1 1/2 cups flour
1/2 cup water
1/2 tsp salt
1/4 tsp baking powder
small amount of freshly grated nutmeg

Beat the eggs. Combine with the rest of the ingredients. Beat together well. If too thick add a little water. It should be thicker than pancake batter, but not as thick as a dough. Either put through a colander with large holes into slowly boiling salted water, soup or broth. You can also but the batter on a small cutting board and slice off small pieces with a sharp knife into the water or soup.
