ISO: Corner Bakery Mini Pumpkin Spice Bundt Cake

I’ve been searching for this recipe for 2 years now and wondered if anyone could help me here. I’ve searched many copy cat recipe sites to no avail. These are so delicious and would love the recipe.

2 cups firmly packed light brown sugar
3/4 cup butter flavor shortening
4 eggs
16 ounces pumpkin
1/4 cup water
2 1/2 cups cake flour
4 teaspoons baking powder
1 tablespoon pumpkin pie spice
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup chopped walnuts
1/2 cup raisins
1 cup confectioners’ sugar
3/4 teaspoon orange zest
4 teaspoons orange juice
additional chopped walnuts (optional)

Preheat oven to 350 degrees.
Grease a 12 cup Bundt pan.
Combine brown sugar and shortening in large bowl.
Beat on low speed until creamy.
Add the eggs one a time, beating well after each addition.
Stir in the pumpkin and water.
Combine the flour, baking powder, pumpkin pie spice, baking soda, and the salt in a medium bowl.
Add to the pumpkin mixture, beating at low speed until well blended.
Beat for 2 minutes at medium speed.
Fold in the 1/2 cup of walnuts and raisins.
Spoon into the pan.
Bake for 55-60 minutes.
Cool for 10 minutes before removing from the pan.
Place cake on serving plate.
For the glaze, combine the sugar, orange peel and orange juice.
Stir with a spoon until well blended.
Spoon over top of the cake, letting the excess glaze run down the sides of the cake.
Sprinkle with additional nuts before the glaze hardens.

Thanks for the recipe but this isn’t it.
I’ve made this recipe before. The one I’m looking for doesn’t have nuts or raisins in it nor does the glaze have orange juice.

Also the name of it is the Pumpkin Gingerbread Mini Bundt Cake, I put spice in my title but it’s gingerbread.

Pumpkin Spice Cake

1/2 cup butter. margarine or shortening
1 1/4 cups sugar
2 eggs, beaten
2 1/4 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1 cup pumpkin - make your own
3/4 cup milk
powdered sugar

In a large bowl cream the butter. Gradually add sugar and cream till light and fluffy. Blend in beaten eggs. Sift together the dry ingredients. Combine pumpkin and milk. Add dry ingredients alternately with pumpkin mixture.
Pour into a greased bundt pan and bake at 350 for about 30 minutes.

Cool for at least 1 hour.
Drizzle with sugar glaze (1 cup powdered sugar with 1 tablespoon milk, mixed until smooth) or decorate as desired.
