Italian Pepperoni Bites

Italian Pepperoni Bites

3,5 ounce package of pepperoni, chopped
1 cup shredded cheddar cheese ( provolone or an Italian blend would be nice too )
1 tomato chopped
3/4 cup mayonnaise
2 Tbs prepared pesto
2 pkgs ( 10-oz each) Refrigerated flaky biscuits

Heat oven to 350 degrees F.

Combine all ingredients. Mix well.

Cut each biscuit in 1/2 and place in a well greased mini muffin tin.

Spoon 1 Tbs of the filling into each cup. This will bring the mixture to
the very top of the cup, not to worry. Mine did not over flow, they mearly
puffed up golden bown and they slightly deflated once they cooled.

Bake for 20-25 minutes

You may want to check before 20 minutes.

Makes about 40 appetizers.
