Italian Tuna Sandwiches

Italian Tuna Sandwiches

1 can of chunk tuna in olive oil
3 tablespoon. chopped black olives
Crushed red pepper flakes to taste
1/2 cup shredded mozzarella
Extra virgin olive oil
1 tablespoon. minced celery
1 tablespoon. minced Onion
Lettuce leaves
Tomato slices if desired
Pita bread

Open tuna and drain well. Place tuna in a bowl and add black olives, crushed
red pepper flakes to taste, shredded mozzarella, celery, and onion. Mix
together well. Add enough extra virgin olive oil to moisten to your taste.

Take a pita bread and cut in half. Place one lettuce leaf in each half of
the pita bread pocket and place a tomato slice on top of each lettuce leaf
if desired.

Fill the rest of the pita pocket halves with as much tuna mixture as you
want. Serve.
