Italian Turkey Sauté

This quick dinner dish will satiate your cravings for Italian food without adding a lot of carbohydrate to your meal plan. Be sure to use cooked turkey within the week for safety and best freshness. To freeze cooked turkey, wrap large pieces in plastic wrap, then in butcher paper or foil.

Serving Size: 3-4 oz

Ingredients:

olive oil - 2 tsp
diced onion - 1/2 cup
garlic cloves, minced - 2
crushed tomatoes - 1 1/2 cups
red wine - 2 tbsp
fresh oregano, minced - 2 tsp
leftover, cubed cooked turkey (preferably white meat) - 3 cups
fresh basil, minced - 2 tbsp
capers - 2 tbsp

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and saute for 5 minutes. Add the garlic and saute for 2 more minutes. Add the crushed tomatoes and wine. Bring to a boil. Lower the heat and simmer for 10 minutes. Add the remaining ingredients and simmer for 5 minutes.
