Jack Stack Barbecue Fresh Berries and Cream
Ingredients
Cream
1 cup sugar
3/4 cup soft cream cheese
1/4 cup lemon juice
1 cup heavy whipping cream
Berries
Strawberries (halved)
Raspberries (whole)
Blackberries (whole)
Blueberries (whole)
Brown sugar (garnish)
In food processor, mix cream cheese, sugar, and lemon juice. Mix for about 30 seconds. Add heavy whipping cream and mix for an additional 30 seconds.
Prepare fruit mix (per bowl) 4 halves (or 4 small) strawberries, 6 blackberries, 6 raspberries, and 8 blueberries.
Place 2 tablespoons of cream mixture in bottom of small bowl. Place berry mix on top of cream. Drizzle 1 tablespoon of cream mixture over berries. Lightly sprinkle on brown sugar.
Serve.
