Last night’s experiment to make the boring old grilled hake a bit more interesting. The kids wanted chips, not ideal with the topping, but they have to eat oi!. I think it would also work well with Tuna or Yellowtail.
Olive, herb and orange salad
Ingredients
3 oranges, segmented
1 red onion, sliced into moons
8 olives, pitted and halved, I used black ones marinated in Blackberry dressing, but plain will also do
Italian parsley, basil, rocket or mint leaves (or a mixture) , I used the lot
ground black pepper
Sea salt
olive oil
4 fish portions, grilled (used sardines, tuna or yellowtail)
Method:
Toss together the oranges, onion, olives, italian parsley, basil, rocket or mint leaves.
Season well, add a splash of olive oil and serve on grilled fish.
It was really nice with the fish, but I’m sure it could just be a side salad too.
