Jumpin’ Jack Griddle Cakes

1 tbsp vegetable oil
1 tbsp granulated white sugar
2 eggs
1 tsp baking powder
1 tsp cinnamon
1 cup whole wheat flour
1 cup apples (2 apples cooked & mashed or applesauce)
1/3 cup raisins
1 cup milk

In a Batter Bowl mix the oil and sugar. Whisk in eggs.

Gradually add the baking powder, cinnamon, and whole wheat flour.

Add in apples and raisins, mix well. Slowly pour in milk and mix well until mixture forms a smooth batter.

Pour batter onto preheated stovetop griddle. Cook until browned on bottom and flip to brown other side.

Serve with syrup and butter. Makes approximately eight 4” cakes.
