La Bou Bakery Apple Cake Copycat

Copycat recipe for the La Bou Bakery Apple Cake

Ingredients:

3 eggs
1/2 cup vegetable oil
1 1/2 cups granulated sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 tablespoon vanilla
2 cups unbleached, all-purpose flour
4 cups apples, peeled, cored and cut into 1-inch pieces
1 cup walnuts, toasted and chopped

Instructions:

Preheat oven to 350 degrees. Grease and flour a 9-by-13-inch baking pan.

In a large bowl, whisk eggs and then add the oil and sugar until blended. Mix in the baking soda, salt, cinnamon and vanilla. Stir in the flour until just incorporated. Fold in the apples and walnuts.

Pour the batter into the prepared pan. Bake in the preheated oven for 55 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Serve slightly warm or at room temperature.
