Lela Jumbo Lump Crab Cakes
Lela Restaurant in Bloomington, Minnesota opened this past June. Chef John Mullen shares a recipe for their Jumbo Lump Crab Cakes.
Lela Jumbo Lump Crab Cakes
1/2 tablespoon Dijon Mustard
1/4 cup red pepper, seeded and finely diced
1 tablespoon mayonnaise
Lemon zest
1 pinch cayenne pepper
1/4 teaspoon Worcestershire sauce
1 tablespoon green onions, finely diced
1 tablespoon cilantro, freshly chopped
Kosher salt, to taste
- Combine all ingredients on a bowl until well combined.
1 lb. Jumbo Lump Crab Meat
Clean the crab meat.
Add the crab meat to the mixture.
Cook a piece of the mixture and adjust season to taste
Portion into 2.3 oz. of cakes.
Dust the crab cakes with a season cornstarch before sear them.
