Lemon Coconut Pie
1-1/3 cups sweetened condensed milk (not evaporated)
½ cup lemon juice
Grated rind of 1 lemon
2 egg yolks
1 cup shredded coconut
1 Vanilla Wafer Pie Shell
Meringue
Mix first 4 ingredients together, mix well, add ¾ cup coconut and pour into pie shell. Cover with meringue, sprinkle remaining coconut over top.
Meringue
2 egg whites
4 tbsp sugar
½ tsp vanilla
Beat eggs until frothy. Add sugar gradually and continue beating until stiff. Add vanilla.
Pile on pie and bake in slow oven for 15 to 18 minutes.
