Lemon Dill Chopped Salad

2 medium sized romaine lettuce hearts, cleaned and chopped
1 seedless cucumber, peeled and sut into small cubes
3/4 cup baby carrots, cut into 1/4" thick coins
1 cup cherry tomatoes, quartered
1/2 cup crumbled feta cheese (I like to use blue cheese)
2-3 Tbsp fresh lemon juice
2 Tbsp white wine vinegar
1 Tbsp honey
2 Tbsp chopped fresh dill
1/4 tsp salt
1/8 tsp black pepper
1/3 cup olive oil
1 large apple, peeled and cored (Gala or Cortland)

In a large bowl combine lettuce, cucumber, carrots cherry tomatoes and cheese. Cover and refrigerate.
In a small bowl whisk together lemon juice and next 5 ingredients. Whisk in oil in a thin stream until blended. Coarsely grate apple and add to dressing.
To serve: Toss apple dressing mixture with lettuce mixture and serve immediately.

Hi Witch,

I am going to make this for dinner tonight “NO COOKING”, as it is so hot and muggy here. Think I will have it with some nice Crusty French bread and plenty of iced tea.

Thanks Again for a Great cool recipe!!!

I hope you like it! I love the dressing. The apple is and interesting addition. It is also good topped with grilled chicken - I have that sometimes for dinner when my husband is out of town.

guess what Kitchen Witch - I am an onion lover too… I usually add finely chopped red onion when I make this!

Glad you enjoyed it

Hi Witch,

The salad was a big hit at my house, the dressing was terrific. Oh yes we ate early this time about 3 O’clock. Hubby loved it to.

Thanks
