Lemon Pepper Wing Sauce Question

Hi, I am trying to find a good base to make a wing sauce off of and not really sure where to start. I love lemon pepper sauce on chicken wings and currently use a combination of liquid margarine, lemon pepper seasoning and some herbs. it tastes great but as soon as it hits hot wings, it melts the margarine to basically oil and sits at the bottom of the plate. Is there a better base to use that will hold up and stay in suspension. I’ve used xanthum gum to thicken it but it seems to take a lot to make it hold up. Any suggestions?
