Lemon Poppy Seed Muffins

Note: This recipe came from a Bed & Breakfast Inn in Greenville, Alabama a few years ago.

3-1/4 cups flour
2 cups sugar
1 cup milk
1/2 cup butter, softened
2 eggs
1/4 cup poppy seeds
2 Tablespoons lemon juice
2 teaspoons lemon rind
2 teaspoons baking soda
3/4 teaspoons salt

Preheat oven to 350 degrees
Using an electric mixer, mix together at low speed.
Bake in muffin tins for 20 to 25 minutes
