These potatoes go great with baked spiced pork chops. Tangy and slightly spicy.
3-4 yellow or red potatoes - cut into wedges
1 tsp rosemary
1 tsp thyme
1 tsp oregano
1 bay leaf
2 lemons - juiced
1 tsp garlic powder
1/4 medium onion - sliced thinly
1/4 cup olive oil
2-4 tsp crushed peppers (optional-adjust according to taste)
Mix all ingredients in baking pan.
Let marinade for 1-2 hours, stirring every 30 minutes to make sure potatoes marinade evenly.
Bake covered at top rack of oven for 30 minutes at 400F.
Then remove cover for another 30 minutes at 400F.
