Lime Cottage Cheese Jell-O
3 oz. package Lime Jell-O
1 cup mixture of boiling water and pineapple juice
9 oz. crushed pineapple (drained)
1 cup Mayfield Cottage Cheese (low-fat or regular)
1/2 cup mayonnaise (light or regular)
1/4 cup chopped raw nuts (pecans)
- Drain crushed pineapple and reserve juice
- Add pineapple juice to water to make one cup
- Bring to a boil and mix with Lime Jell-O
- Chill Jell-O mixture until it has consistency of egg whites
- Beat until foamy and fold in remaining ingredients
- Pour into 1-1/2 quart Pyrex dish and chill until ready to serve
