Low Sodium Apple Raisin Muffins

1 1/2 c Flour
1/4 c Sugar
2 1/2 t Sodium Free Baking Powder
1/2 t Cinnamon
1/4 c Egg Substitute
1/4 c Skim Milk
1/2 c Water
1/2 c Raisins
1 c Apple Pie Filling, Unsweetened

Place raisins in water. Heat in microwave for 2 minutes. Allow to cool for 10 minutes. Stir together dry ingredients. Make a well in the center. cut up apples in filling. Stir together milk, egg, apple and raisin mixture… Add all at once to dry ingredients. Stir until just moistened. Spoon in greased or paper lined muffin pans. Mix together cinnamon and sugar. Sprinkle over top. Bake at 400 for 20 minutes.

These muffins are dense, grainy, fruity and delicious. Double doses of Apple? apple butter, diced apple and a dark, spicy. More moist and delicious.

Wow . I love muffins . I tried out my chocolate muffins last week and i made it a bit different by adding some fruits ( got apple and added that ) , it din’t go very well to tell you the truth . :stuck_out_tongue:
