Luscious lemon mousse


2 pkgs. 3-oz. Lemon gelatin
2 cups boiling water
1 pint Lemon sherbet
1 tablespoon lemon juice
1 tablespoon grated lemon rind
Cool whip for garnish

In a bowl dissolve gelatin in boiling water. Blend in the sherbet, lemon juice and rind. Beat until sherbet is melted. Divide into six dessert cups. Refrigerate until set. When ready to serve top with a dollop of Cool whip.
