Luscious Peanut Butter and Banana Pie
15 large white marshmallows
3/4 cup milk
1/2 cup extra smooth peanut butter
1/2 cup Nutriwhip whip topping
2 medium bananas
1/2 cup chopped unsalted peanuts
lemon juice
1 9-inch prepared, baked pie shell
In saucepan over medium heat, heat marshmallows and milk until marshmallows are melted; stir constantly. Remove from heat and stir in peanut butter. Cool mixture to room temperature.
Beat Nutriwhip until stiff; fold in peanut butter mixture.
Slice 1 banana into bottom of baked pie shell. Sprinkle with 1/4 cup peanuts. Pour peanut butter mixture over top. Chill for about 3 hours or until set.
At serving time, slice remaining banana and dip in lemon juice. Garnish pie with banana slices and remaining chopped peanuts.
Makes about 8 servings.
Helpful Hint: If garnishing with sliced fruits such as bananas, apples, pears or peaches, dio them first in lemon juice to help maintain the fresh sliced colour.
