Magnolia Bakery Apple Walnut Cake with Caramel Cream Cheese
2 Cup flour
1 Cup whole wheat flour
1 teaspoon cinnamon
1 teaspoon soda
3/4 teaspoon salt
1-1/2 Cup oil
2 Cup sugar
3 large eggs @room temp.
3 cups Golden Delicious apples, cut in 1" pieces (3 apples)
1 Cup coarsely chopped walnuts
3 T. apple-flavored brandy*
Grease/flour 2-9" cake pans, line bottoms with waxed paper.Sift dry
ingredients set aside.
Beat oil, sugar, at med. speed, about 3 min.Add eggs, one at a time; add dry
ing.Batter will be very thick.
By hand, fold in apples, nuts, brandy.
Put in pans; bake 45-55 minutes. @325º.
Let cool 10 minutes, remove from pans, cool on wire racks.
*Substitute brandy with 1/2-1 tsp. brandy or rum flavoring + water to equal
Caramel Cream Cheese Icing:
2-8 oz. pkgs. cream cheese, softened
1/2 c. butter, softened
1 c. cold caramel
1/4 c. caramel for decorating
Beat cream cheese, butter, add caramel.
Frost and swirl with 1/4 c. caramel on top of cake.
Garnish with chopped walnuts or halves, if desired.
