Margarita Ole Bars

BASE:
1 3/4 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter, softened

FILLING:
4 whole large eggs
1 1/2 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/3 cup frozen concentrated margarita mix, thawed
2 teaspoons lime peel, grated
1 tablespoon powdered sugar

  1. Heat oven to 350. In large bowl, combine all base ingredients; mix
    at low speed until crumbly. With floured fingers, press mixture
    firmly in bottom of ungreased 13x9 pan.

  2. Bake at 350 for 20 to 25 minutes or until light golden brown.

  3. Meanwhile, beat eggs slightly in large bowl. Add next three
    ingredients; blend well. Stir in remaining filling ingredients.

  4. Remove pan from oven. Pour filling over warm base. Return to oven;
    bake an additional 18 to 22 minutes or until top is golden brown and
    filling is set. Cool 1 hour or until completely cooled.

  5. Just before serving, sprinkle bars with 1 tablespoon of powdered
    sugar forced thru a sifter. Cut into bars.
