MARGARITA TEXAS SWEET ONION SALSA
1/2 cups chopped Texas SpringSweet or Texas Super Sweet Onion
2 cups diced fresh or thawed frozen peaches
2 tablespoons finely minced, seeded serrano or other small hot chile peppers (optional)
2 tablespoons chopped fresh cilantro
3 tablespoons tequila
2 teaspoons grated lime peel
2 tablespoons fresh lime juice
1/4 teaspoon ground cumin (optional)
Mix all ingredients and serve with Grilled Beef or as a dip with
tortilla chips. Make ahead if possible and refrigerate several hours
or overnight to allow flavors to blend.
Makes about 3 cups.
