Martini Marinated Shrimp Cocktail
This has to be one drunk Shrimp…wonder if they do breathe test on ShrimP???
Makes 8 servings
2 cups water
1 cup white wine
1 tablespoon pickling spice
1 lemon, sliced
1 tablespoon salt
16 medium fresh shrimp, peeled and deveined
4 cups ice
9 ounces gin
2 ounces vermouth
In a sauce pot bring the water, wine, pickling spice, sliced lemon and salt to a boil. Add shrimp and stir. Cook 1 minute then add ice. Let cool.
Strain the liquid from the shrimp and sprinkle 1 ounce of gin over shrimp. Let sit 30 minutes.
Mix martinis with remaining gin and vermouth. Pour into glasses and garnish with 2 shrimp on skewers.
