Mary Moore’s Home-Made Turkish Delight
4 Tablespoons good quality gelatine
1/2 cup cold water
2 cups corn syrup
1 cup white sugar
1/4 teaspoon salt
Juice and grated rind of 1 medium sized lemon
red food coloring
2 Tablespoons icing sugar
1 teaspoon cornstarch
Soak gelatine in the cold water 10-minutes.
Mix together the corn syrup, sugar and salt and
heat to 270 degrees F (hard ball) using candy thermometer.
Remove from heat and add soaked gelatine, lemon juice and
grated rind and a few drops of red food coloring to make
mixture a delicate rose color.
Stir well, then pour into a pan 8 x 8-inches which has been very
lightly buttered then rinsed with cold water.
Let stand at least 8 hours.
Cut into 1-inch squares and roll in a mixture of 2 Tablespoons icing sugar
and 1 teaspoon cornstarch.
