Mary Moore’s Pumpkin Spice Cookies
Makes aabout 40 to 45 cookies.
2/3 cup butter or margarine (room temperature)
1 cup granulated sugar
1 egg
1 1/2 cups canned pumpkin
2 1/2 cups unsifted cake and pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon nutmeg
1 1/2 teaspoons cinnamon
1/4 teaspoon ginger
1/2 teaspoon cloves
1/2 cup milk
1 teaspoon vanilla
1/2 cup raisins or chopped nuts (optional)
Note: These are soft cookies.
In beater bowl cream together butter and sugar until light.
Add egg and pumpkin and combine thoroughly.
In small bowl combine all dry ingredients.
Add vanilla to milk then add liquid alternately with dry ingredients
stirring to blend.
Stir in raisins or nuts if desired.
Drop by heaping teaspoonfuls onto greased cookie sheets 2-inches apart.
Bake at 375 degrees F for 12 minutes.
Remove from cookie sheets with lifter to cake racks to cool.
Makes about 40 to 45 cookies.
