Mesquite seasoning is a very common ingredient in the American sout
west but it can be difficult to source elsewhere. I’ve tried to look for a recipe
on the net, but to no avail. So, during my last trip to the US I bought sev-
eral packets. After perusing the contents list I came up with the critical
ingredients and after playing around and tasting this is my rendition of a
home-made mesquite seasoning blend. You must use smoked paprika in
this to get that traditional smoky taste.

Ingredients:
1 tsp garlic granules 1 tsp dried onion flakes 3 tbs smoked paprika 2 tsp tomato powder 1/2 cumin powder 1 tsp chili pepper (adjust to taste) 1 tsp ground black pepper 1 tsp mustard powder 1/2 tsp dried sage 1/2 tsp dried rosemary 1/2 tsp brown granulated sugar 1/2 salt 1/2 tsp mesquite smoke flavor (optional)

Method:
Combine all the ingredients in a spice grinder or a coffee grinder and render to a fine powder. Place in an air-tight jar and store in a sealed cupboard.
