Mexican Lasagna

I came across a really good recipe and wanted to pass on…

2 pounds ground beef, browned
1 (16 oz) can refried beans
1/2 tsp dried oregano
2 tsp ground cumin
3/4 tsp garlic powder

12 uncooked lasagna noodles

2 1/2 cups water
2 1/2 cups salsa

2 cups sour cream
1 (2 1/2 oz) can sliced black olives
3/4 cup sliced green onions

1 cup shredded pepperjack or mexican blend cheese

Preheat oven to 350 degrees. Lightly spray a 13x9 inch baking dish with nonstick cooking spray.

Combine ground beef, beans, oregano, cumin & garlic powder.

Place 4 noodles in bottom of baking dish. Spread half the mixture over noodles. Top with 4 more noodles and add remaining beef mixture. Cover with remianing noodles.

Combine water and salsa. Pour over noodles in pan. Cover with foil.

Bake 1 1/2 hours or until noodles are tender.

Combine sour cream, onions & olives. Spoon over lasagna and top with shredded cheese. Bake uncovered until cheese melts.

Remove and let stand for 10 minutes to set.
