Microwave Mississippi Mud Cake

Fast and delicious, it doesn’t get any better than that!

Microwave Mississippi Mud Cake

1 cup butter
1/2 cup cocoa
4 eggs
2 cups sugar
1 1/2 cup flour
15 large marshmallows

Pecan Fudge Frosting:
1/2 cup butter
3 Tbsp cocoa
2 Tbsp white corn syrup
2 cup confectioners’ sugar
3 Tbsp milk
1/2 cup chopped roasted pecans

Microwave butter and cocoa on high (700 watt oven) for 2 minutes until melted. Separately, beat eggs. Add sugar, flour and cocoa mixture; beat until well blended. Pour batter into 8x12" microwave safe dish. Heat 7-9 minutes on high, rotating dish after 4 minutes. Place marshmallows on top of cake and heat on med-high 2-3 minutes or until melted. Cool 30 minutes before frosting. Cool completely before serving.

For frosting: Microwave butter and cocoa on high for 1-1 1/2 minutes until melted. Add corn syrup and sugar; stir well. Gradually add milk and stir until smooth. Fold in pecans. Melted marshmallows and pecan fudge frosting make this microwave cake irresistible.
