Mini Cream Cheese Tarts

THESE ARE NICE FOR THE HOLIDAYS ANY TIME OF THE YEAR!

MINI CREAM CHEESE TARTS

FILLING:
3 packages of cream cheese (8 oz. each), softened
1 cup sugar
5 eggs
1/2 Tbs. vanilla extract
1 package of foil cupcake tins (in baking aisle) NOT PAPER!!!

TOPPING:
1 c. sour cream
1/4 c. sugar
1 Tbs. vanilla
canned cherry pie filling, about 20 Oz. (You may have leftovers)

Cream the 3 packages of cream cheese using a mixer. Add the 5 eggs and vanilla extract. Fill foil baking tins about three-quarters full. Bake 40 minutes at 300 degrees. Cool 5 minutes.

Mix the sour cream, sugar, and vanilla extract together and place about 1 Tbs. on top of cooked tarts. Bake in oven another 5 minutes. Top with canned cherry pie filling or any other canned pie filling of your choice.

I love these! I always seem to tweek a recipe to my own tastes. Try this.
I put a piece of hershys chocolate or 1/2 a peice of caramel on top before baking. If you use a crust of some sort, put it on the crust then put the cheese filling and bake. mmmmm sooo good.
