Mini Ham Frittatas

1/4 pound cooked ham, cubed
4 ounces cheddar cheese, shredded
6 eggs
4 egg whites
3 tablespoons chives, minced
2 tablespoons milk
1/4 teaspoon salt
1/4 teaspoon black pepper

Divide ham evenly among eight muffin cups that have been sprayed with
non-stick cooking spray. Top ham with cheese.

In a large bowl, beat eggs and egg whites. Beat in chives, milk, salt and
black pepper. Pour over cheese, filling each muffin cup 3/4 full.

Bake at 375 degrees for 25 minutes or until knife inserted near the center
comes out clean. Carefully run knife around edges to loosen; remove from
pan.

Serve warm.
