Mini Philo Crab Bites

1 beaten egg
1 to 1-1/4 cup mayo
2 tbsp minced shallotte
1 tbsp minced celery
2 tbsp minced bell pepper
1 cup grated parmasen cheese
Juice of 1/2 lemon
1/2 tbsp of Old Bay
1 lb of Florida Stone Crab Claws
2 packages of mini philo shells(in frozen section)
chopped sprigs of chives for topping

Pre-heat oven to 350. Combine all the above ingredients but reserve 1/4 of the parmasen for topping.Fold together gently. Using spoon fill shell slighty rounded and place into oven proof dish. Top the shells off with remaining cheese and chopped sprigs of chives. Bake 12-15 minutes or until just golden. Serves 6-8
