Miss Olivia’s Table Guacamole
3 ripe avocados, peeled, pitted and removed from the shell with a fork and spoon (shredded)
1 cup mayonnaise
1 cup sour cream
Juice of 1/2 fresh lime
2 cloves fresh garlic, very finely minced
2-3 teaspoons chili powder (hot or mild)
1 teaspoon salt
1 rounded teaspoon ground cumin
1 can Rotel tomatoes, lightly drained
In a medium bowl, combine mayonnaise, sour cream, lime juice, garlic, chili
powder, salt and cumin. Gently stir in Rotel. Just before serving add
avocado.
