This recipe was given to me by a co-worker. She brought this in for a luncheon and everyone loved it.
2 pounds unpeeled, med-size fresh shrimp
6 c. salted water
1/2 c. sugar
1 1/2 c. white vinegar
1 c. veg. oil
1/4 c. capers, undrained
1/2 to 1 tsp. salt
1 1/2 tsp. celery salt
1 med. white or red onion (i prefer red)
Peel shrimp, leaving tails on. Devein, if desired. Mix everything together in a saucepan. Cook 3 minutes. Place in refrigerator for 6 hours before serving.
