Mock Corn Bread made with Cream of Wheat
Recipe is from Hints from Heloise column, 1968.
1 cup uncooked cream of wheat cereal
1 cup all purpose flour
1/4 cup granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup cooking oil
10 drops yellow food coloring (optional)
1 egg, beaten.
8 x 8 inch square non-stick or greased baking pan
Preheat oven to 425 degrees F.
Stir dry ingredients together.
Mix in wet ingredients and beaten egg.
Stir gently and don’t over beat the mixture.
Pour into prepared 8 x 8 inch baking pan
and bake until top is golden brown and a toothpick
inserted in center comes out clean, about 20 to 30 minutes
Top will be crisp and crunchy.
