Monster egg casserole

1/2 pound of bacon
1/2 pound of sausage
1/2 can of diced luncheon loaf or spam
8 extra large eggs
shredded cheese
diced bell pepper
diced onion
diced mushroom
diced tomato
sliced jalapeno(optional)

Fry the bacon, sausage and luncheon loaf/spam. Halfway through the frying, add the onion, bell pepper, mushroom, tomato and jalapeno pepper while you are frying the bacon, sausage and luncheon loaf/spam and saute. Remove bacon and sausage and crumble and then add it back to pan. Whisk together the eggs until thoroughly liquified and pour in skillet over top of the meat and veggies. Cover with a lid until egg mixture hardens after egg mixture has hardened, add shredded cheese and cover with lid again and melt. Add salt and black pepper after it’s finished and Louisiana Hot sauce if you desire.
