Mozzarella Potatoes

Mozzarella Potatoes

4-5 potatoes, peeled
1/4 - 1/2 c. extra virgin olive oil
1/2 c. Italian bread crumbs
salt and pepper
8-12 oz. shredded mozzarella cheese

Slice potatoes lengthwise into quarters. Rinse potatoes in cold water
and pat dry. Salt and pepper slices; toss in olive oil and then in
breadcrumbs. Place on a cookie sheet with sides. Bake at 350° for 1
hour or until browned. Remove from oven and top slices with shredded
mozzarella cheese. Return to oven until cheese melts.
