(about 2 cups)
1/2 pound fresh mushrooms, sliced
4 tablespoons plus 1/4 pound butter
3 tablespoons sherry or cognac
1/4 tsp freshly ground pepper
1/4 tsp salt
Saute the mushrooms in 4 tbsp of butter for 5 minutes. Turn them occasionally to brown all sides.
Put mushrooms and pan juices into the container of a food processor. Add remaining ingredients and blend until smooth.
Serve on grilled meats.
