Mushroom Frittata

1 Cup sliced fresh mushrooms
2/3 Cup onion, chopped
2/3 Cup green pepper, chopped
1 Cup zucchini, chopped
1 teaspoon minced garlic
2 tablespoon oil
5 eggs
1/3 Cup light cream
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 Cup soft bread cubes
8 ounce. cream cheese, cut into 1/2" cubes
1 Cup shredded cheddar cheese

Saute mushrooms, onion, green pepper, zucchini and garlic in oil until crisp
tender.

Beat eggs with cream, salt and pepper; add mushroom mixture, bread cubes,
cream cheese and cheddar cheese. Stir thoroughly but lightly so cream cheese cubes are intact.

Pour into well greased 9" pie plate.

Bake in preheated 350 degree oven for 45 minutes or until set in center and
slightly browned.

Cool 5 to 10 minutes before cutting into wedges.

Serves 6.
