This is my favorite salsa recipe to make around this time of year. Full of flavor and fresh veggies.
1 can (12 oz) of Shoepeg corn - drain well
1/2 cup fresh green pepper - diced
1 can (15 oz) black beans - rinse and drain well
2-3 tomatoes - chopped small
1/2 cup diced red onion
Mix above ingredients and add 3/4 cup italian dressing. Then add:
2 tbls fresh cilantro
1 tsp chili powder
1 tsp garlic powder
1 tsp pepper
1 tsp tabasco
I let the salsa chill in the frig about 2 hours. Serve with chips and enjoy! Adjust tabasco sauce for heat.
