My Aunt's Zucchini Bread

Mix together and set aside:
3 eggs
1 tsp. pure vanilla
1 c. oil (vegetable or canola)

Mix together:
3 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped nuts (I use pecans)
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1/2 tsp. nutmeg

  1. After these ingredients are mixed well, add this mixture
    in small amounts to egg mixture. THIS BATTER WILL
    BE VERY STIFF…DON’t PANIC!)

  2. Add 2 c. shredded zucchini; blend well.

  3. Spread batter into 3 small greased and floured loaf
    pans.

  4. Bake 1 hour or until toothpick inserted in center comes
    out clean.

    Because the batter is so stif, the first time I made this
    I thought I did something wrong. Turned out to be
    one of my favorites. Hope you enjoy it too!
