Nasi Goreng (Malaysian Fried rice)

225g./ 8 oz. long – grain rice
75g. /3 oz. butter
225g. / 8 oz. shelled shrimps
1 onion, chopped
4 spring onions, chopped
2 garlic cloves, crushed
½ kg. / 1 lb. rump beef, cut into thin strips
salt and pepper
30ml. / 2 tablespoons soy sauce.
125 g. / 4 oz. bean sprouts Omelet
5 eggs
45 ml./ 3 tablespoons milk
15g. / ½ oz. butter

Cook the rice in boiling, salted water for 15 to 20 minutes or until it is cooked and tender and the liquid is absorbed. Melt 25g. / 1 oz. of the butter in a frying – pan. Add the shrimps and sauté for 2 minutes. Set aside. Melt the remaining butter in the pan. Add the onion, spring onions and garlic and fry for 5 minutes. Stir in the meat and salt and pepper and fry, stirring constantly, for 5 minutes or until the meat is cooking through. Set aside.

To make the omelet, beat together the eggs, milk, salt and pepper to taste.Melt the butter in another frying pan.Add the mixture and cook until the top is creamy and the underside brown.Remove from the pan and cut in to thin strips.return the pan with the meat with low heat.Stir in the rice,shrimps,omelet strips,soy sauce and bean sprouts and cook for 5 minutes or until the mixture is hot
