I am new here & probably don’t know what I’m doing. I wanted to share on of my favorite recipes with everyone & ask if anyone has a good, easy recipe for a beef round steak that is cut for braciola? I haven’t eaten it in a few years but really liked it then, so I bought one (actually 2 in pkg.) & now I don’t know what to do with it. DUH!!! I can’t believe that in all of my cookbooks & recipes, I can’t find anything. :roll:

Braciola (Italian Stuffed Beef Rolls)

Wonderful cheese-stuffed beef rolls simmered in pasta sauce. A great Sunday afternoon meal. Serve with a side of pasta and fresh steamed veggies.


1 lb top round steak
4 slices mozzarella cheese
1/4 cup freshly grated parmesan cheese
2 tablespoons garlic powder
salt and pepper, to taste
2 tablespoons olive oil
28 ounces pasta sauce

Makes: 4 servings
2 hours 20 minutes total (approx.) … 20 mins prep

Pound the steak very thin and cut into 4 pieces.
Place a slice of mozzarella on each piece, then top with parmesan, garlic powder, salt and pepper.
Roll each piece up tightly and secure with a string.
Heat the olive oil in a large nonstick skillet and brown the rolls evenly on each side.
Drop them in your favorite pasta sauce and allow them to simmer for 2 hours or until tender and cooked through. (The meat will add a wonderful flavor to your sauce!).
Remove the strings and serve.
(Alternative: Assemble and brown the beef rolls the night before and store them in the fridge. Then drop the rolls and the sauce in your crockpot and cook on low for 8 hours the next day).

Beef Braciola

This tastes wonderful after simmering in a pot of sauce with meatballs and sausage.

Beef Filling
1/2 lb ground chuck
1 tablespoon chopped fresh parsley
2 tablespoons breadcrumbs
1/4 teaspoon minced garlic
1/4 teaspoon salt
1/4 cup grated romano cheese

4 (6 ounce) top round steaks, cut 1/4 inch thick
1/2 cup oil (for frying)
1/2 cup flour, for coating

Makes: 4 servings
2 hours 20 minutes total (approx.) … 20 mins prep

To Make Filling: Combine all ingredients and mix well.

To Make Braciola: Lay the steak slices on a work surface Divide the filling into 4 portions and place a portion atop each steak slice, spread the filling thinly over the entire surface of each slice and roll, jelly roll style, starting at the shorter end and secure each roll with a toothpick.
Heat oil in skillet Place flour in shallow dish& dredge each beef roll in flour, then place rolls in skillet& brown on all sides.
Remove and drain Add to your favorite pot of spaghetti sauce and simmer for 1 1/2- 2 hrs.

Beef Braciola

Italian stuffed beef rolls

12 slices top round beef, about 1/4 inch thick
1/4 lb italian salami, minced
1/2 lb veal, ground
1/2 cup grated parmesan cheese
2 tablespoons butter, softened
1 cup soft white breadcrumbs
1/2 cup milk
2 tablespoons minced parsley
1 egg, beaten
salt and pepper
12 very thin slices prosciutto
2 tablespoons olive oil
2 tablespoons butter
1 clove garlic
1 large onion, chopped
2 carrots, chopped
1 bay leaf
3/4-1 cup dry white wine
1 can plum tomatoes, sieved (about 2 lbs.)

6 servings
2 hours total (approx.) … 1 hr prep

Flatten slices of beef as thinley as possible.
Mix ground meats, cheese, butter, breadcrumbs soaked in milk and squeezed dry, parsley and egg.
Taste mixture and season with salt and pepper.
Place a slice of prosciutto on each slice of beef, spread with stuffing.
Roll slices tightly and tie with string.
Heat oil, butter together in large skillet.
Add garlic, onion, carrots and bay leaf, saute a few minutes.
Add beef rolls and brown well on all sides.
Stir in wine and cook over moderate heat until most of the liquid has evaporated.
Add tomatoes and bring to a boil.
Reduce heat to low and simmer for an hour or until the beef is fork tender.
The recipe does not say but I beleive it should be covered for this simmering.
Remove beef to a warm platter.
Strain pan liquid, return to skillet and cook for a few minutes until thickened to taste.
Pour over beef rolls and serve hot.

Braciola (Braciole) with tomato and wine sauce

This recipe is TERRIFIC.

2 lbs thinly sliced round steaks
2-3 cloves garlic, chopped fine
1/2 cup soft breadcrumbs
6 slices bacon, cooked and crumbled (or REAL bacon bits)
3 hard-boiled eggs, chopped
2 1/2 teaspoons oregano leaves, divided
1 tablespoon parmesan cheese
1 1/2 teaspoons parsley flakes
1 teaspoon salt, divided
1/4 teaspoon pepper, divided
3 tablespoons olive oil
2 (16 ounce) cans crushed tomatoes
2 teaspoons onion powder
1/4 cup dry red wine

Makes: 4-6 servings
2 hours 30 minutes total (approx.) … 30 mins prep
(6 to 7 hrs., in slow cooker)

Place steaks between waxed paper or plastic wrap- pound until very thin.
Cut steaks into serving size pieces (about 8), or you can roll the whole thing and tie with string (That’s how I do it!!) Combine garlic, crumbs, egg, bacon, 1 1/2 tsp oregano, cheese, parsley flakes, 1/2 tsp salt 1/8 tsp. pepper, 1 tbs. olive oil.

Spoon equal amounts of this mixture on steaks.
Roll steak and tie with string, or secure with toothpicks.
Heat oil in skillet and brown rolls.
Transfer to oven proof casserole dish.
Add tomatoes, onion powder, 1 tsp oregano, 1/2 tsp salt, 1/8 tsp black pepper.
Simmer, covered (or bake in 350 degree oven) for 1 1/2 hrs.
Add water if necessary- Add wine and cook another 10 min.
This can also be prepared and placed in a slow cooker, set to low for 6 to 7 hrs. Depending on the slow cooker, you may wish to test for doneness at the 6 hr. mark. If it’s ready, add the wine and continue slow cooking for another 1/2 hr.
Serve with pasta and a salad or side of vegi’s and you’ve got a great and complete meal!
