No Bake Confetti Brownies
1 cup chopped walnuts or pecans
2 cups colored / tinted miniature Marshmallows
3 cups Graham cracker crumbs (about 38 squares)
1 cup confectioners sugar
2 pks (6 oz each) semi-sweet chocolate chips
1 cup evaporated milk
1/2 tsp peppermint extract
Mix together nuts, marshmallows, crumbs and sugar in large bowl.
Melt chocolate in evaporated milk over low heat, stirring until thick and smooth.
Remove from heat and add peppermint extract.
Reserve 1/2 cup chocolate mixture for frosting.
Add remainder to crumbs mixture. Stir until all crumbs are moistened.
Turn into buttered 8-inch square pan. Press down into pan.
Spread the reserved chocolate mixture over top. Chill until ready to serve.
Cut into 1 x 2 inch pieces. Garnish each with a walnut if desited.
Yield: 32 brownies.
