Novel Layer Bar Cookies from 1932
This recipe was a weekly winner
of the San Jose News cookie recipe
contest in 1932.
Bottom Layer
1/2 cup of butter (or shortening)
1 cup granulated sugar
2 beaten eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 cups pastry flour
Cream butter and sugar, add beaten
eggs, vanilla, flour sifted with salt
and baking powder. Spread 1/2 inch
thick in a shallow buttered pan
(preferably 12 by 15 inches).
Top Layer
1 cup brown sugar
1 egg white
1/2 teaspoon vanills
3/4 cup of chopped walnuts
Beat egg white and add brown sugar
slowly. Add vanilla. Spread over
first layer and sprinkle nuts over
top. Bake 30 minutes in moderate
oven (325-degrees F.).
Cut in squares when cool.
