Not long ago, someone requested a recipe for a salad dressing that contained no oil. I found the following amongst all my recipes - hope it’s good.
Oil-Free Salad Dressing
1/2 cup tomato juice
1 tbsp lemon juice
1 tbsp wine vinegar
1/4 tsp dry mustard
1 tbsp finely chopped onion
1 tsp chopped parsley or chives
Combine in jar with a tight-fitting lid. Shake well. Refrigerate unused portion up to one week.
About 5 calories per tablespoon.
