one pot potatoes and sausage

Cut up one pound of good smoked sausage into thin slices and brown in a large pot (if sausage is very very lean, you may need to add a little oil, if not, it will render it’s own fat) When brown, add one chopped onion and sauted until onions are clear. While they are browning, peel 5-6 large idaho potatoes and cut into large cubes. Add potatoes and enough water to the sausage and onions to cover potatoes. We like ours spicy so we add alot of Tony’s cajun seasoning (I think this makes the dish, if you can’t find Tony’s, any kind of seasoning blend will do). Let the potatoes cook until they have broken apart. We like ours sort of soupy so we add water as needed. The spicier the better!!!
