Orange Filling for Cake
2 tbsp butter
1/4 cup sugar
2 eggs, beaten
1 tbsp grated orange rind
1 tbsp lemon juice
1/2 cup orange juice
Combine all ingredients and mix well. Cook over very low heat, stirring constantly until well thickened, about 10 minutes.
Chill well before spreading on cake. Filling for 2 layers.
ORANGE COCONUT - Add 1/2 cups moist coconut.
